Liz is a new NCAT staff member, but a familiar face in NCAT’s Jackson office. She served as a FoodCorps member in Connecticut for one year before becoming the FoodCorps Fellow
in Jackson for two years. Welcome back to Liz!

Originally from New Hampshire, Liz went to Cornell College in Mt. Vernon, Iowa. Liz knew Iowa was a corn-producing state, but before she arrived she pictured it as a fresh, corn-on-the-cob-producing state. When she got there she realized it was actually commodity corn being grown, the kind of corn that either becomes livestock feed, ethanol, or requires significant processing before being consumed by humans. This new perspective led her to pursue a degree in environmental science, and she learned of the many ways sustainable agricultural practices can improve the environment both on the farm and in the broader landscape.

This understanding led her to FoodCorps, and subsequently to NCAT, where she is now coordinating a large, multifaceted project to help improve access to healthy, culturally appropriate food for historically disadvantaged communities throughout Mississippi. NCAT is partnering with Asian Americans for Change, FoodCorps National, Mileston Cooperative Association, Mississippi Farm to School Network, and the Mississippi Band of Choctaw Indians. Liz is tasked with coordinating the efforts of all these groups in order to forward the cause of food justice in Mississippi. This project is funded by the W.K. Kellogg Foundation, and we are glad to have Liz aboard to lead the way. laborum.
